Mommy needs Oatmeal too

 

So this weekend I was searching for a quick breakfast to make and take on the go.  Pinterest is my bff right now 🙂  I came across this recipe for Overnight Oats.  I was a little skeptical at first on how it would come out but boy was I wrong!  It is delicious!

Ingredients:

  • 1/4 cup rolled oats
  • 1/2 cup unsweetened coconut milk
  • 1 tsp chia seeds
  • 1/4 sliced banana (freeze the rest for smoothies)

Directions:

Combine the oats and 1/2 cup of the milk in a jar. Stir in the chia seeds. Add banana, cover jar, shake and refrigerate overnight.

*For gluten-free be sure to use gluten free oats.
