I was looking for a dessert to make in a rush for the holiday weekend and found this. Wow this is so easy to make and smells heavenly.
Impossible to get wrong and impossible to stop eating! Dense, moist, sweet (but not too sweet) and so incredibly easy to make! I add more coconut and a little more flour than the recipe says, otherwise it can be a little too runny for my liking, but it’s fine the way it is too. Overall I love this pie and it’s become one of my signature cakes!
1/2 cup (125 mL) BISQUICK* mix
2 cups (500 mL) milk
1 cup (250 mL) flaked or shredded coconut
3/4 cup (175 mL) sugar
1/4 cup (50 mL) butter or margarine, melted
1 1/2 tsp (7 mL) vanilla
Heat oven to 350°F (180°C). Grease or spray 9-inch (23 cm) pie plate with non-stick cooking spray.
Stir all ingredients until blended. Pour into pie plate.
Bake 50 to 55 minutes or until golden brown and knife inserted in the center comes out clean. Cool completely. Cover and refrigerate any remaining pie.
